Yellow Tea

Yellow tea is produced in a similar way to green tea. The difference is given by the covered baskets in which the tea leaves are stored after processing, and by their placement on platforms, next to smoldering coals, for several days, for drying. This gives the tea other properties, and in particular gives it a different color.
This process is still used today, because the old processing methods have almost been lost. Therefore, only a perfect connoisseur can decide when the process is finished – depending on a certain color and a characteristic smell of the leaves. And, since there are not many masters, yellow tea is produced only in China.
